Best Grilled Trout EVER

My sweet husband made this wonderful meal for me on Mother's Day weekend!  It was the best fish I've ever had and it was quick and easy to prepare.  I won't even mention how unbelievably healthy it was too (if you take the bacon wrapped shrimp and scallops out of the pic!) 
Here is his recipe and some helpful tips...

Whole Trout Filets with Skin
Sea Salt
Cracked Black Pepper
Tony's Creole Seasoning
Extra Virgin Olive Oil

Wash fish in cold water & pat dry. 
Brush EVOO on both sides of fish...heavily on skin side and light on fish side.
Salt, pepper and add seasoning to taste.
Set grill on medium heat and place fish on the grill, skin side down.  Cook 4-5 minutes.  Turn over fish and cook an additional 3 minutes.  Fish should be flaky and not translucent.  Don't overcook it!

Shrimp & Scallops Wrapped in Bacon 

Individually wrap the scallops and shrimp in uncooked bacon slice.  
Slide on to skewer. (We get 3 per skewer)
Grill over medium heat until bacon will release from grill (about 5-6 minutes)

Grilled Asparagus, Zucchini, Squash, Portobella, and Onion

Lightly brush Olive Oil over vegetables.  Then, sprinkle "Jane's Crazy Mixed Up Seasoning Salt" over veggies and place on grill over medium heat.  Turn after a few minutes, just watch these and take them off when they are done to your liking.
