Sweet Potato Scones Recipe

5 tbsp. butter
3 tbsp. sugar
2 c. self-rising flour
1 tsp. cinnamon
1/2 tsp. nutmeg
1 c. cooked sweet potato, mashed
1/2 c. half and half (I used fat free)
1 egg
1-2 tsp. raw sugar

Honey and Butter for drizzling on top.

Cut in butter with sugar and flour until crumbly.
Add cinnamon and nutmeg.
Whisk in sweet potato, half and half and egg until mixture is just moistened.
Turn onto a floured surface; knead 10 times.
Pat into an 8 inch circle.
Cut into 8 wedges but do not separate.
Place on non-greased baking sheet.
Sprinkle with raw sugar.
Bake at 400 degrees for 15-18 minutes or until brown.
Serve warm with melted honey butter drizzled on top. Pin It Now!
