Mexican Chicken Chopped Salad
Here's another HEALTHY YOU recipe.
I saw this recipe on PINTEREST - it came from Greens and Chocolate (Blog). I made a few changes in order to lighten up the recipe. Here's my version...salad:
2 cups shredded chicken
1 green bell pepper, diced
1 can black beans, rinsed
1 can corn
2 roma tomatoes, diced
1 onion, chopped
1 head ice berg lettuce, washed and chopped
1/4 cup fresh cilantro, chopped
2 ripe avocados, diced

2 ripe avocados, diced
Baked Tostito Chips (to go under the salad, as a base)
dressing:
1/2 cup light mayonnaise
2/3 cup Greek yogurt
1 tbsp ranch seasoning
1 tbsp taco seasoning
Directions:
In a large bowl, combine all salad ingredients together, excluding the tortilla chips and avocado.
In a small bowl stir all dressing ingredients together.
To Plate:
Scatter tortilla chips at base of salad plate. Cover with salad and then dollop dressing on salad, topping with diced avocado (1/2 avocado per salad)

This salad makes 4 servings (and they are HUGE servings).
