Spinach Spaghetti Pie

When I first got married (almost 20 years ago) someone gave me the recipe for "Spaghetti Pie" and it quickly became one of my favorites.  It was so easy to make, using the microwave, and it had a "lasagna taste" to it.  I haven't made it in almost 10 years but I recently stumbled across the recipe and decided to try putting a new, healthier spin on it.  It turned out really good and it was super easy.




12 oz thin Spaghetti noodles
1 lb lean Ground Beef
12 oz jar Prego Spaghetti Sauce Traditional
1/2 c chopped Onion
3/4 tsp oregano
3/4 tsp basil
1 tsp minced garlic
2 Eggs
1/2 c Parmesan Cheese
2 tsp EVOO
2 tsp Pesto
1/2 c chopped Spinach
16 oz Cottage Cheese
1 1/2 c shredded mozzarella cheese


Brown ground beef and drain fat (if any).  Add spaghetti sauce, onion, basil, oregano and garlic.  Simmer.



Cook spaghetti noodles according to package.  While the noodles are cooking and the sauce is simmering…

In a medium sized mixing bowl, combine eggs, parmesan cheese, EVOO and pesto.  Set aside.



In a separate bowl, mix cottage cheese and spinach.  Set aside.



After noodles are finished cooking, combine them with the egg mixture.  Place in a well greased casserole dish.  I use a 10 inch square deep dish.  Layer the cottage cheese/ spinach mixture on top of that.  Then pour the meat sauce on top, completely covering.  Cover the dish with wax paper or paper towels and cook for 4 minutes.  Turn dish halfway and cook another 4 minutes.  Sprinkle mozzarella cheese on top and cook an additional minute. 



 Allow to set for a few minutes before serving.  Enjoy!

My 12 year old saw this online and asked me to create "Nautical Nails".  
We painted them 10 minutes before leaving for a cookout so the lines aren't all that straight but it worked! The bad news was that we didn't have time to do a top-coat and the white stripes all washed off by the end of the night.  ALWAYS put on a clear top coat!!!

Do you guys know about this already?  If so, why didn't anyone tell me?  I got an email last week from Kyle at Hometalk asking me to link up my Bathroom Remodel post on their website.  So, I headed over there to check it out and was amazed at how cool this site is!  


 Here's the scoop... you post your projects via photo or video and write up a description.  You can ask fellow community members advice or you can just brag about your project.  It's very inspiring and there are a lot of professionals on there too.  You can even find out if anyone recommends local contractors, etc in your area.  I was addicted immediately.  I loved giving my opinions on what to do in a certain room like paint colors or window treatments, etc.  I've also already gotten some comments on my bathroom post.  I think I'll link up some other projects this week too.

On Hometalk, you can save the inspirational ideas you find on a clipboard.  It's like pinning on Pinterest  but instead you "clip it" onto a virtual clipboard and it saves all the projects in different categories.  

Just so you know, I'm not getting any kind of perk for this "advertisement".  I'm just excited about finding this site and I wanted to let you all know about it.  It's going to be very helpful and inspirational to me and my blog and I hope you'll find it helpful as well.

Another garage sale find... this one was $20.  
My 10 year old has been begging for a desk and I thought we could make this one work just perfectly!  

She wanted to paint the desk so I let her do the entire first coat of paint and she did an amazing job!

We picked out some hardware at Hobby Lobby to add a little bit of her personality.

And I couldn't resist giving you the reality picture of what the desk looked like a couple of days after I took the pictures for the post!  She's definitely made it her own!
FYI:  I used ASCP Pure White paint on this desk.
