Easiest Muffin Recipe Ever!
Blueberry? Strawberry? Chocolate Chip? Cinnamon Apple?
You just add a cup of whatever ingredient suits your mood. This is my mom's muffin recipe and I've been making it forever. We always have muffins on Sunday morning. I might not get around to fixing breakfast any other day of the week but muffins are a tradition on Sundays at our house. This recipe is super easy. You can make them healthy or you can make them fattening. I'm going to give you several recipes and you can decide! Eventually, you must try them all! They're amazing!
In the below recipes you will see that I've altered this recipe in many different ways, adding everything from oatmeal to applesauce. You can leave these plain (without the 1 c. of fruit and decrease sugar to 1/4 c.) for an excellent dinner muffin too.
Basic Recipe:
1 c. sugar
1 c. milk
2 eggs
2/3 c. oil
2 c. SR flour
1 c. of fruit or other flavor
Bake at 400 degrees for 20 minutes.

Blueberry Muffins
2 eggs
1 c. milk
1 c. sugar
1/4 c. unsweetened natural applesauce
2/3 c. oil (I use extra light olive oil)
1 c. oatmeal, uncooked
2 c. self-rising flour
1 c. frozen or fresh blueberries
1 tsp vanilla flavoring
Mix eggs, milk, sugar, oil and applesauce. Add remaining ingredients and pour into greased muffin pan. This makes 12 large muffins. Bake at 400 degrees for 20 minutes.

Applesauce Oatmeal Muffins
2 eggs
1 c. milk
1 c. sugar
1/3 c. oil
1 c. oatmeal, uncooked
1/2 c. unsweetened natural applesauce
2/3 c. oil (I use extra light olive oil)
2 c. self-rising flour
1 tsp cinnamon
1 tsp vanilla flavoring
Mix eggs, milk, sugar, oil and applesauce. Add remaining ingredients and pour into a greased muffin pan. Bake at 400 degrees for 20 minutes.

1 c. semi sweet chocolate chips
1 c. milk1 c. sugar
1/3 c. oil
1 c. oatmeal, uncooked
1/4 c. unsweetened natural applesauce

1 c. semi sweet chocolate chips
Mix eggs, milk, sugar, oil and applesauce. Add remaining ingredients and pour into a greased muffin pan. Bake at 400 degrees for 20 minutes.

Gooey Surprise Muffins
1 c. milk
1/2 c. sugar
2 1/4 c. self-rising flour
2/3 c. oil
Mix together above ingredients and pour into a greased muffin pan.
In a separate bowl, mix together the following ingredients...
2 Tbsp butter
2 tsp cinnamon
2 Tbsp flour
Put about 1/2 tsp of "gooey stuff" on top of each unbaked muffin. This will sink to the center and make a gooey, yummy surprise inside!
Bake at 400 degrees for 20 minutes.

Healthy Muffins
1/2 c. egg beaters
1 c. skim milk
1/2 c. sugar
1/3 c. granulated splenda
1/2 c. unsweetened natural applesauce
1 c. oatmeal
1 c. self-rising flour
1 c. self-rising wheat flour
1 c. fresh fruit
Mix eggs, milk, sugar, oil and applesauce. Add remaining ingredients and pour into a greased muffin pan. Bake at 400 degrees for 20 minutes.

For the gooey surprise muffins, how much of each ingredient do I need for the goo???
ReplyDeleteI'm sorry about that... I need to correct the recipe ASAP. For the goo - mix 2 Tbsp butter, 2 tsp cinnamon, 2 Tbsp flour, 2 Tbsp brown sugar. I hope you like them! :)
